spice-wise i usually go whole cumin and salt... not sure about blitzing, i've been assuming it's partly the thread-like quality of the shredded veggies that holds the situation together? Give it a go!

Hiya
I love this. We are scone people, but I'm liking the idea of the pakora, as I just bought besan flour hoping to sneak it into a bread recipe Im yet to find.
I realise you are busy, but could you elaborate on the 'whatever spices and seasonings you like bit'?? I was thinking salt, pepper and turmeric, but would like to hear your favourites.
Also, do the vegies have to be grated, or would lightly blitzed ( thermomix, food processor) be ok?

Actually the plants are using the sun's energy to make new organic matter primarily from the air! Maybe that's what you meant by "converting sunlight to goodness" but I know alot of people think that plants build thir mass out of sunlight or soil, so I like to share when I hear stuff like that. (I'm a science teacher.) Thank you for your inspiring chronicles!

Kirsten, They were a key bit of all the veggie boxes given out at lunch- I certainly had a few in my delicious box! And I supplied snow peas- in a bag with a whole bunch of pimentos. When I recongnised those on a platter in the evening- the chef getting it all ready said to me 'oh- are you the lady that put them in with a handful of snow peas'. Such a small thing- but made me blush with pride that he remembered my small offering in such specifics. I think from memory 70% of the food was crowd farmed. A really profound gesture to me as one of the organising team of the event and as an attendee and a small scale backyard farmer. Ten thumbs up to the amazing jess and jill for pulling it off.

you could cut the willows off at the ground and coppice them for stickwood annually - great source of hot-burning firestarters... re living mulch, i'd get in touch with your local permaculture association and find out what folks near you and in similar conditions use? I'd also look up Martin Crawford's forest gardening resources that are all UK based - good luck!
